Rad, Red Vegetable


This is a very rad vegetable.
Not only is it "one of the healthiest foods in the world," but it tastes great. Especially when cooked with bacon.
It is also easy to grow, and it grows year round in places like Colorado. It has that nice, dark green leaf color that absorbs enough sunlight to survive fairly cold conditions. I personally love the color of the red stalk and how it makes a meal so much more colorful. I just had some leftover pasta that I made with some of the red chard and over night the stalk color dyed the pasta an amazing fuchsia color. So pretty!
